Moulin aux Moines is one of the more ancient domaines in the Cote de Beaune, having been farmed by the Abbey of Cluny monks (and then the monks of the Abbey de Citeaux) since 962AD.
The land was chosen by the monks because of a number of very favourable qualities; it was placed at the intersection of two valleys in the heart of the Cote de Beaune (in Auxey-Duresses), was a completely walled-in property, and had its own river running
through the domaine which provided nourishment, both to the landand the monks.
A chapel and a dovecote of 500 birdhouses were built in 1650,and both buildings still exist today. The dovecote was an indication of the high status of the domaine, as at the time the number of pigeons in a dovecote was said to be equivalent to the
power of the owners in the region. In addition, the droppings of the pigeons were always collected due to extremely high levels of nitrogen and used as natural fertilizers.
In 2008, under the quidance of winemaker Willy Roulandes, the domaine immediately converted all of the vineyards to organic and biodynamic farming methods. Willy had years of education on biodynamic farming having been at Domaine de Montille for a
number of years.

2x Saint Romain Blanc 2018: This wine is blended from two different vineyards, both with old vines averaging 65 years. Although this is one of the newest wines from Moulin aux Moines, the vineyards were already farmed organically. The vineyards is also quite high at 400 metres, and the wine sees no new wood so it is a very pure example of great Chardonnay from the region.
2x Pommard 2018: Moulin aux Moines' village Pommard is filled with red cherry fruit, earth and cocoa notes. Braced by great acidity and firm but very fine tannins. 100% biodynamic and organic farming, low intervention and 5% new wood keeps this wine extremely pure and honest.
2x Volnay les Famines 2018: This is spicy and energetic, with beautifully balanced richness. This wine also sees very little new oak, so the wine is pure and direct, with amazing red and black fruits. The finish is clean, with balanced acidity and super fine tannins.
