Encircled between steep cliffs and rocky outcroppings, the village of Saint Romain was one of the first vineyard sites of the Celt and Gallo-Roman peoples. This wine is blended from two different vineyards, both with old vines. Although this is one of the newest wines from Moulin aux Moines, the vineyards were already farmed organically. The vineyards is also quite high at 400 metres, and the wine sees no new wood so it is a very pure example of great Chardonnay from the region.
